HACCP Alignment with the new Codex Guideline CAC 2020

In September 2020, the Codex Alimentarius Food Hygiene Commission published the updated guideline on the HACCP System, CAC 2020.

Among the novelties:

  • Prevention of Allergen Cross-Contact;

  • Preventive Maintenance;

  • Reduction of Waste;

  • Hygienic Design of Environments and Equipment;

  • Food Safety Culture;

  • Use of New Intelligent Tools.

Europe has incorporated the introduced novelties through Regulation EU 382/2021, which came into effect on March 24, 2021. While awaiting the national incorporation of these novelties, ESI’s team has prepared a service for all organizations in contact with international retailers or engaged in export activities to the UK or North America (USA and Canada). This service aligns their HACCP plan with the new Codex guidelines. The service also includes the drafting of the Company Policy following the additional guideline on Allergen Management, Codex CXG 80.
